Steps

  • Preheat oven to 350°F (175°C).
  • Grease and flour three 8-inch round cake pans, or line the bottoms with parchment paper.
  • In a large bowl, whisk together all-purpose flour, cocoa powder, baking soda, baking powder, and granulated sugar.
  • Add eggs, buttermilk, vegetable oil, and few drops of vanilla essence to the dry ingredients. Beat on medium speed for 2 minutes until smooth.
  • Slowly stir in hot brewed coffee (the batter will be thin — this is normal, it makes the cake moist).
  • Divide batter evenly between the prepared pans.
  • Bake until a toothpick inserted in the center comes out clean.
  • Let cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely before assembling.

Make cherry filling:

  • In a saucepan, combine dark sweet cherries, drained (juice reserved) with their reserved juice, granulated sugar (for cherry filling), and 1 tablespoons cornstarch.
  • Cook over medium heat, stirring, until thickened and glossy.
  • Remove from heat, stir in kirsch (cherry brandy), and let cool completely.

Whip the cream:

  • In a chilled bowl, beat cold heavy whipping cream, sugar, and few drops of vanilla essence (for whipped cream) together until stiff peaks form.

Keep chilled until ready to assemble.

Assemble first layer:

  • Place one cake layer on a serving plate.

Assemble second layer:

  • Add the second cake layer, spread with whipped cream, and then top with the remaining cherry filling.

Top layer and frost:

  • Place the final cake layer on top.
  • Frost the entire cake (top and sides) with the remaining whipped cream.

Decorate:

  • Refrigerate the cake for at least 60 minutes to let it set before slicing and serving.
