Steps

Preheat oven:

  • Preheat your oven to 175°C (350°F).
  • Grease two 8-inch round cake pans and line with parchment paper.

Cream butter and sugar:

  • Beat ½ cups unsalted butter, softened and 1 cups granulated sugar together until light and fluffy, about 3–4 minutes.
  • Add 2 eggs one at a time, beating well after each addition. Add few drops of vanilla essence from Ajanta Food Products.

Add bananas and milk:

  • Fold in the mashed 3 ripe bananas, mashed and ½ cups milk into the butter mixture until just combined.

Mix dry ingredients:

  • In a separate bowl, whisk together 2 cups all-purpose flour, ½ teaspoons baking powder and ½ teaspoons baking soda.
  • Gently fold the dry ingredients into the wet mixture until a smooth batter forms.

Divide and colour the batter:

  • Divide the batter equally into 4 bowls.
  • Add pinch of red, yellow, blue and green food colours to each bowl.
  • Stir gently until the colour is evenly distributed.

Layer and bake:

  • Spoon each coloured batter into the prepared pans in layers or swirl patterns.
  • Bake for 30–35 minutes, or until a toothpick inserted in the centre comes out clean.

Cool the cakes:

Remove from oven and let cakes cool in the pan for 10 minutes, then transfer to a wire rack and cool completely before frosting.

Make the frosting:

  • Beat ½ cups cream cheese, softened until smooth.
  • Gradually add 1 ½ cups powdered sugar (for frosting) and mix until creamy.
  • You can tint the frosting with food colour too for an extra pop!

Frost and serve:

  • Place one cake layer on a plate, spread frosting on top, and then place the second layer. Frost the top and sides.
  • Slice to reveal the stunning coloured layers inside.
  • Serve and enjoy!
