Instructions

  • Preheat your oven to 180°C (350°F). Grease and line an 8-inch cake tin.
  • Add vinegar or lemon juice to milk and let it sit for 5 minutes.
  • In a bowl, sift together flour, cocoa powder, baking powder, and baking soda.
  • In another bowl, beat sugar and butter/oil until creamy. Add eggs (or curd), vanilla essence, black currant pulp/jam, and food color.
  • Mix well.
  • Add the dry ingredients to the wet mixture in batches, alternating with the buttermilk.
  • Do not over mix.
  • Gently fold in the black currants (dusted with a little flour to prevent sinking).
  • Pour the batter into the cake tin and bake for 30–35 minutes or until a toothpick comes out clean.
