Instructions:

  • Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
  • Line the bottoms with parchment paper for easy removal.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition, then mix in the vanilla essence.
  • Add the dry ingredients in three parts, alternating with the buttermilk, beginning and ending with the flour mixture.

  • Once the cakes have cooled, spread a layer of frosting on top of one cake layer.
  • Place the second layer on top and spread a thin layer of frosting over the top and sides of the cake for a “crumb coat.”
  • Chill for 15 minutes, then add a second layer of frosting for a smooth finish.
