Banana Cupcakes with Pink Frosting

Ingredients
- 2 ripe bananas, mashed
- 1 ½ cups all-purpose flour
- 1 cups granulated sugar
- 4 tablespoons unsalted butter, softened
- 2 large eggs

Directions:
Making the cake:
- Preheat your oven to 350°F (175°C).
- Line a 12-cup muffin tin with cupcake liners.
- Beat 4 tablespoons unsalted butter, softened and 1 cups granulated sugar together until light and fluffy, about 3 minutes.
- Add 2 large eggs one at a time, mixing well after each.
- Stir in 2 ripe bananas, mashed, 1/3 cups sour cream, and few drops of vanilla essence until combined.
- Gently fold in 1 ½ cups all-purpose flour, ½ teaspoons baking powder and ½ teaspoons baking soda.
- Divide the batter evenly among the liners, filling each about ⅔ full.
- Bake for 18–19 minutes, or until a toothpick inserted in the center comes out clean.
- Remove cupcakes from the tin and let them cool on a wire rack completely before frosting.
- Do not frost warm cupcakes!
Make pink frosting:
- Beat ½ cups unsalted butter, softened (frosting) until creamy.
- Gradually add 2 ½ cups powdered sugar, sifted, mixing on low.
- Add 2 tablespoons freeze-dried strawberry powder (or 2 tbsp strawberry jam) and 2 tablespoons heavy cream, then beat on high for 2–3 minutes until fluffy.
- Add pinch of pink food color from Ajanta Food Products until you reach your desired shade of pink.
Frost & serve:
- Transfer frosting to a piping bag with a star tip (or spread with a knife).
- Swirl onto cooled cupcakes.
- Decorate with sprinkles, a slice of banana, or dried strawberry pieces if desired.
