3 tbsp of icing sugar

1 ½ tsp of gelatine

3 tbsp of warm water

Method
Bake
the Sponge
·
Preheat oven to 180°C. Grease and line one 8
inch round tin.
·
Sift flour, cocoa powder, baking powder and baking
soda.
·
Whisk eggs and sugar till light.
·
Add oil, milk and vanilla essence.
·
Mix in dry ingredients gently, then add hot
water or coffee.
·
Bake for 30 to 35 minutes.
·
Cool completely.
Prepare
the Mousse
·
Soak gelatine in warm water for 5 minutes.
·
Melt dark chocolate using double boiler
method and cool slightly.
·
Whip chilled cream with icing sugar till soft
peaks form.
·
Add melted chocolate and gelatine into
whipped cream. Fold gently.
Assemble
·
Place cake layer in springform tin.
·
Pour mousse over the sponge and level the
top.
·
Refrigerate for at least 4 hours or until
set.
Decorate
·
Remove from tin and finish with chocolate
shavings on top.
