¾ cup sugar
·
2 eggs

Instructions

Preheat your oven to 180°C. Grease an eight
inch round tin and line it with parchment.
·
Whisk the flour, cocoa powder, baking powder,
and baking soda in a bowl.
·
In another bowl, beat the butter and sugar
until creamy. Add the eggs one by one. Mix in the vanilla essence.
·
Add the dry mixture in two parts. Pour in the
milk and mix just until the batter comes together.
·
Fold in the black currant puree. Add a few
whole currants if you want extra fruit pieces.
·
Pour the batter into the prepared tin and
smooth the top.
·
Bake for about 30 to 38 minutes. Test with a
toothpick. It should come out clean or with a few moist crumbs.
·
Let the cake cool in the tin for ten minutes,
then move it to a rack to cool fully.
Optional frosting
·
Whip one cup of cream with two tablespoons of
black currant syrup or a spoon of cocoa powder for a light topping.
·
Spread on the cooled cake before serving.
